If renting a car, it is preferable to make round trips that take several days for day trips, because with day trips at least 50% of your time will be spent to do anything to get in and out of Sydney each day .
If you stay in B & B (bed & breakfast) Bed and Breakfast, you will have a better experience than motels that guests can help you plan your holiday in Australia, and are good sources of information usefel about the sights to see and things to do, but you 'll need to book in advance (especially on weekends and summer).
If you live in a big city and have come to see something different, then 2-3 days in Sydney should be enough. It's a great city, but cities are cities. Try to spend most of your holiday in Australia in the countryside if you want to discover the real Australia.
